Spring; when the grass on the hillsides sways before the first cut and the deep green of the orchards like a sea swell invites you to immerse yourself, be it on foot or a bicycle. In the warm spring air the reawakened nature rouses the senses as the gentle scent of almond flowers blends with the more intense fragrance of violets, herbs, soil and sea salt. In the kitchen this is the time of great spring frittatas (omelettes) seasoned with wild asparagus or with wild herbs growing in the fields of Fiorino, Nova Vas, Serbana and Radina. Spring is the season of new lamb and kid, and sheep chesses flavoured by the home made olive oil. Spring is also the time for the Istrian Malvazija vine festival held in Brtonigla’s main square. |
